Place one-third of the strawberries into bowl. Using a potato masher or fork, mash until puréed. Dollop on top of mascarpone mixture. Using the tip of a knife, swirl strawberries through the cheese. Slice remaining strawberries and arrange in concentric circles on top of filling. Drizzle chocolate overtop. (Make- ahead: Pie can be covered loosely with plastic wrap and refrigerated for up to 8 hours.) Tip: To make your own graham cracker crust, combine 11/4 cups graham cracker crumbs and 2 tbsp granulated sugar in bowl. Pour in 1/3 cup melted salted butter and stir until well-moistened. Pat into 9-inch metal pie plate. Bake at 350°F for 10 minutes. Let cool completely before using. Per serving: 640 calories; 7g protein; 47g fat; 48g carbohydrate; 4g fibre; 3ig sugars; 160mg sodium.
